Bahan
- 1 Nanas, 100 gr Gula, 3 Cengkeh, 1 st Air jeruk nipis
- 8 cm Kayu manis, 1 cm Jahe-geprek, 225 ml Air panas
- 8 sm Es serut/es kepruk, Garam
- Kupas nanas, lumuri dng garam. Diamkan 10 mnt kmd cuci & dipotong kecil2.
- Panaskan gula di pan besar dng api sedang sampai leleh & berwarna coklat (buat karamel). Aduk2 dng sendok kayu.
- Tuang 150 ml air panas sedikit2 ke pan. Aduk terus hingga karamel larut. Beri cengkeh, jahe, kayu mns & ¼ st garam. Aduk terus hingga bumbu meresap & rasa menyatu. Kecilkan api.
- Masukkan potongan nanas & sisa air. Didihkan, masak lagi utk 5 mnt.
- Beri air nipis, aduk. Angkat. Tunggu sampai mendingin lalu simpan di kulkas min 1 jam.
- Ltkkan 2 sm es serut di mangkuk saji, beri potongan nanas & tuangi sausnya.
- 1 fresh Pineapple, 100 gr Sugar, 1 tsp Lime juice, Salt
- 8 cm Cinnamon, 225 ml hot Water, 1 cm Ginger-bruised
- 8 tbsp of crushed Ice, 3 Cloves
- Peel the pineapple; rub them with salt. Let it stand for 10 minutes. Wash & slice it into small pieces.
- Heat sugar in a big pan over medium heat until it melts & brownish (make caramel). Use a wooden spoon to stir it.
- Pour in 150 ml hot water a little at a time. Swirl the water around until it mixes with caramelized sugar. Add in cloves, ginger, cinnamon & ¼ tsp of salt. Keep on stirring until the flavor blended & then reduce the temperature to low.
- Put in pineapple & remaining hot water. Bring it to a simmer & cook for another 5 minutes.
- Add in lime juice, stir well. Remove from the heat. Let it cool down; refrigerate for min. 1 hour.
- Place 2 tbsp crushed ice in serving bowls, add pineapple pieces above the ice; pour in the sauce.
