Chicken Cordon Bleu





In Indonesian & English

Bahan

  • 2 Fillet dada ayam-belah 2, ½ st Oregano
  • 4 lbr Daging asap/Ham, 1 st Paprika bubuk
  • 2 sm Keju Parmesan parut, 4 ptg Keju Swiss
  • 1 st Bawang putih bubuk, 2 sm Mentega
  • 2 sm Susu, 4 btg Thyme segar-petik daun
  • 75 gr Terigu, 75 gr Panir, 2 Telur
  • Garam, Lada hitam bubuk & Minyak Sayur

Saus Jamur:

  • 3 sm Mentega, 30 gr Jamur-iris2
  • ½ Bawang bombay-iris, 2 sm Terigu
  • 1 Bawang putih-cincang, Garam
  • 125 ml Kaldu ayam, 125 ml Susu panas
  • ¼ st Pala, ½ st Lada, 2 sm Olive oil


Cara membuat

  • Lapisi bagian bawah & atas ayam dng plastik lembaran. Pukul2 ayam perlahan dng palu daging hingga setebal ± ½ cm. Campur garam, lada htm, baw.pth bbk & oregano. Lumuri ayam dng campuran ini. Taruh septg keju di bagian tengah salah satu sisi ayam, ltkkan 1 daging asap di atas keju. Lipat salah satu ujung ayam hingga menutupi keju & daging asap. Gulung ayam dimulai dari sisi yg panjang. Semat dng tusuk gigi.
  • Aduk terigu & paprika, sisihkan. Campur panir, thyme, parmesan, garam & lada, sisihkan. Kocok telur & susu
  • Lumuri ayam dng terigu, celupkan di telur kmd lapisi dng campuran panir hingga tertutup semua.
  • Pnskan minyak syr sedlm 1½ cm & mentega dng api sedang. Goreng ayam selama ± 20 mnt (sampai kuning kecoklatan). Balik2 beberapa kali. Angkat & tiriskan.
  • Saus Jamur: Tumis bawang pth, bombay & jamur dng olive oil sampai kecoklatan. Sisihkan. Pnskan mentega di pan dng api sedang. Mskkan terigu, aduk rata. Tuangi susu pns & kaldu. Aduk hingga saus mulai mendidih & mengental. Kclkan api, mskkan jamur-bombay masak 5 mnt, aduk sesekali. Bumbui dng pala, garam & lada.
  • Hidangkan dng kentang puree, goreng atau panggang & saus jamur.

Ingredients

  • 2 Chicken breast fillet-halved, 2 Eggs
  • 4 slices Smoked beef/Ham, 1 tsp Garlic pwd
  • 2 tbsp grated Parmesan, 1 tsp Paprika pwd
  • 4 slices Swiss cheese, ½ tsp dried Oregano
  • 2 tbsp Butter, Leaves of 4 sprigs Thyme
  • 500 gr Flour, 100 gr Breadcrumbs, Salt
  • 200 ml Milk, Black pepper, Vegetable oil

Mushrooms Sauce:

  • 120 ml hot Milk, 1 Onion-slicedPepper
  • 30 gr Mushrooms-sliced, 2 tbsp Flour
  • 3 tbsp Butter, 120 ml Chicken broth, Salt
  • 1 clove Garlic-minced, 2 tbsp Olive oil


Directions

  • Put plastic sheet under & above the breast. Pound the breast gently into ~ ½ cm thick with a mallet. Mix salt, black pepper, garlic pwd & oregano. Rub both sides of the breast with this mixture. Place a slice of cheese in the center of each breast. Lay 1 slice of smoked beef over the cheese. Fold ends over the ham & cheese; roll up, beginning with long side. Secure rolls with toothpicks.
  • Mix the flour & paprika; set aside. Mix the bread crumbs, thyme, parmesan, salt & black pepper; set aside. Beat the eggs together with milk.
  • Dust chicken with flour; dip in the egg & then coat them with the breadcrumbs to cover all.
  • Heat 1½ cm depth of the vegetable oil & butter in a skillet over medium heat. Fry the rolls for ~ 20 min (until golden brown); turning frequently. Remove from the heat & drain.
  • Mushroom Sauce: Sauté garlic, onion & mushrooms with olive oil until brown. Melt butter in a saucepan over medium heat; add in the flour & stir until the mixture is well blended. Gradually stir in hot milk & chicken broth. Stirring constantly until the sauce begins to boil & thickens. Reduce the heat to low; stir in mushrooms-onion; cook for 5 min. Season with salt & pepper to taste.
  • Serve with baked/fried/mashed potatoes & the mushrooms sauce.

Bistik Jawa (Javanese Steak)

Bahan
-  500 gr Daging-iris 1 cm, 5 sm Margarine     Saus:
-  1 st Lada, 1 st Pala, 3 Baw.pth-hlskan         -  1 st Lada htm btr, 1 sm Kcp asin
-  2 sm Kcp mns, 2 sm Kcp asin, 1 st Cuka      -  1 st Maizena+1 sm Air
-  Buncis & Wortel-ptg & rbs, Jagung-rbs        -  1 sm Mentega, 150 ml Susu
-  Kentang-goreng, ½ Bawang bombay-iris          -  ½ st Garam, 1 st Gula

Cara membuat
-   Pukul2 daging sampai menipis Campur rata lada, pala, baw.pth, cuka, kcp mns & asin. Rendam daging didlmnya selama 1 jam. Tumis baw. bombay dng margarine, mskkan daging, goreng daging sampai matang. Sisihkan.
-   Saus: Campur susu, kecap asin, garam, lada htm, gula & mentega dng sisa margarine yg sdh digunakan utk menggoreng daging. Didihkan, mskkan lrtn maizena. Aduk hingga mengental.
-   Pipil jagung kmd campur dng wortel & buncis. Susun kentang goreng, bistik & sayuran di piring saji. Tuang saus di daging.

Ingredients
-  500 gr Beef meat-sliced into 1 cm thick              Gravy:
-  1 tsp ground Nutmeg, 2 tbsp salty Soy sauce     -  1 tbsp Butter, 1 tsp Sugar
-  2 tbsp sweet Soy sauce, Potatoes-fried                -  1 tsp Corn starch+1 tbsp Water
-  5 tbsp Margarine, 1 tsp Pepper, Corn-boiled       -  150 ml Milk, ½ tsp Salt
-  Beans & Carrots-cut & boiled, 1 tsp Vinegar       -  1 tsp Black peppercorns
-  ½ Onion-sliced, 3 cloves Garlic-grind                     -  1 tbsp salty Soy sauce

Directions
-   Pound sliced beef until becomes a bit thin. Mix together the pepper, nutmeg, garlic, vinegar, both soy sauces. Marinate the beef on the mixture for 1 hour. Sauté the onion with margarine; put in the meat, fry until cooked. Remove the meat from heat. Save the remaining margarine & onion.
-   Gravy: Add milk, salty soy sauce, salt, peppercorns, sugar & butter into remaining margarine. Bring to a simmer; pour the corn starch mixture; stir until the gravy becomes rather thick.
-   Cut the kernels off the corn. Mix all vegetables together. Place the vegetables, steak & fried potatoes in serving plates. Pour the gravy on top of the steak.

Cupcake Daging Asap Keju (Smoked Beef & Cheese Cupcake)

Bahan
-  100 gr Daging asap, 300 gr Terigu   -  1 st Soda kue, 2 Telur, ½ st Lada htm
-  50 gr Keju serut, 2 st Baking pwd    -  75 gr Keju Parmesan prt, 5 sm Olive oil
-  275 ml Susu, Garam secukupnya        -  2 st Mustard, 1 st Cabai bubuk (opt)

Cara membuat
-   Tumis daging asap dng 1 sm olive oil. Campur rata susu, olive oil, mustard & telur. Sisihkan.
-   Pnskan oven 180° C. Aduk rata terigu, baking pwd, soda kue, lada, cabai bbk & keju prt. Tuangi campuran susu, aduk hingga menyatu rata. Mskkan tumisan daging, aduk rata.
-   Mskkan adonan ke 12 buah wadah cupcake sampai ¾ ya. Hias bagian atasnya dng keju serut. Panggang ± 30-35 mnt (sampai matang).

Ingredients
-  50 gr shredded Cheese, 275 ml Milk        -  5 tbsp Olive oil, 2 tsp Mustard, Salt
-  100 gr Smoked beef, 2 tsp Baking pwd   -  75 gr grated Parmesan, ½ tsp Black pepper
-  300 gr Flour, 1 tsp Baking soda                -  2 Egg, 1 tsp Cayenne pepper pwd (opt)

Directions
-   Sauté smoked beef with 1 tbsp olive oil. Mix together the milk, olive oil, mustard & egg. Set aside.
-   Preheat oven to 180° C. Combine the flour, baking pwd, bak.soda, pepper, cayenne pepper & parmesan. Pour in the milk mixture & stir to combine. Add in sautéed beef; mix them well.
-   Fill the batter into 12 pcs. cupcake cups until ¾ full. Sprinkle shredded cheese on the top. Bake for ± 30-35 minutes (until cooked).

Pelecing Kangkung (Spicy Vegetable Salad)

Bahan
-  ½ st Air jrk limau, Minyak goreng    Bumbu halus I:
-  250 gr Kangkung, 2 Daun jeruk         -  10 Rawit merah, 3 Cabai merah
-  50 gr Kacang panjang, 50 gr Toge   -  1 st Terasi, 3 Kemiri, 5 Baw.mrh
-  3 sm Kacang tnh, 2 sm Kelapa prt   -  1 st Garam, 1 Tomat
Bumbu halus II:
-  1 Baw.putih, 1 cm Kencur, Gula
-  1 Cabai mrh, 1 Rawit, Garam

Cara membuat
-   Ptg2 kmd rebus kangkung & kacang panjang. Seduh toge dng air pns. Goreng kacang tnh. Tiriskan semua. Campur bumbu hls I dng 1 st minyak & limau. Campur kelapa dng bumbu hls II & daun jeruk kmd sangrai.
-   Atur sayuran & kacang di piring. Beri bumbu halus I & bumbu kelapa, aduk rata.

Ingredients
-  ½ tsp Kaffir lime juice, 50 gr Long beans  Grind into a paste I:
-  2 Kaffir lime leaves, 50 gr Bean sprouts    -  10 Bird`s eye chilies, 3 Red chilies
-  250 gr Water spinach, 3 tbsp Peanuts       -  3 Candlenuts, 5 Shallots, 1 Tomato
-  2 tbsp grated Coconut, Frying oil                 -  1 tsp Salt, 1 tsp Shrimp paste
Grind into a paste II:
-  1 clove Garlic, 1 cm Lesser Galangal, Salt
-  1 Red chili, 1 Bird`s eye chili, Sugar

Directions
-   Cut & then boil the water spinach & long beans. Soak beansprouts in boiled water. Fry the peanuts. Drain all. Mix spices paste I with 1 tsp frying oil & lime juice. Combine grated coconut, spices paste II & lime leaves; roast for awhile.
-   Place the vegetables & peanuts in serving plate. Add in spices paste I & roasted coconut; combine them with the vegetables well.

Terik Daging, Tahu & Telur (Dried Beef, Tofu & Egg Curry)

Bahan
-  500 gr Daging sapi, 500 ml Santan ktl    Haluskan:
-  4 Dn jeruk, 1 Dn. salam, Minyak grng     -  1 st Ketumbar, 5 Kemiri, 1 cm Kunyit
-  1 Sereh & 3 cm Lengkuas-geprek            -  7 Bawang merah, 2 Bawang putih
-  1 Tahu-ptg & goreng ½ mtng, 1 Asam     -  ½ st Jintan, 2 Cabai keriting (opsional)
-  100 ml Air kelapa, 4 Telur-rebus             -  1 st Lada, 2 st Garam,1 st Gula mrh

Cara membuat
-   Ptg daging ukuran 6X4X1 cm. Tumis bumbu hls, lengkuas, sereh, asam, daun jrk & salam dng 2 sm minyak hingga harum. Mskkan daging, aduk hingga daging berubah warna.
-   Mskkan 350 ml santan & air klp, masak di api kcl hingga empuk. Beri sisa santan, masak hingga ½ kering, aduk sesekali. Mskkan tahu & telur. Masak di suhu sedang hingga kuah mengering.

Ingredients
-  500 gr Beef-cut into 6X4X1 cm               Grind into a paste:
-  4 Kaffir lime leaves, 1 Bay leaf                -  1 tsp Coriander, 1 tsp Brown sugar
-  1 Lemongrass & 3 cm Galangal-bruised     -  7 Shallots, 2 cloves Garlic, 1 cm Turmeric
-  1 Tofu-cut & fry ½ dried, Frying oil        - ½ tsp Cumin, 2 Cayenne peppers (optional)
-  100 ml Coconut juice, 4 Eggs-boiled         -  2 tsp Salt, 1 tsp Pepper, 5 Candlenuts
-  1 Tamarind, 500 ml thick Coconut milk

Directions
-   Sauté the spices paste, galangal, lemon grass, tamarind, lime leaves & bay leaf with 2 tbsp of frying oil until fragrant. Add in the beef chunks; stir until the beef colour changed.
-   Pour in 350 ml coconut milk & juice; cook over low heat until the beef is tender. Add in the remaining coconut milk; cook until the gravy rather dry, stir occasionally. Put in the tofu & eggs; cook over medium heat until the gravy becomes thick. Remove from the heat.

Setup Nanas Karamel (Poached Pineapple with Caramel Syrup)

Bahan
-  1 Nanas, 100 gr Gula, 3 Cengkeh      -  225 ml Air panas, 1 cm Jahe-geprek
-  8 cm Kayu manis, 1 st Air jrk nipis   -  8 sm Es serut/es kepruk, Garam

Cara membuat
-   Kupas nanas, lumuri dng garam. Diamkan 10 mnt kmd cuci & dipotong kecil2.
-   Panaskan gula di pan besar dng api sedang sampai leleh & berwarna coklat (buat karamel). Aduk2 dng sendok kayu.
-   Tuang 150 ml air panas sedikit2 ke pan. Aduk terus hingga karamel larut. Beri cengkeh, jahe, kayu mns & ¼ st garam. Aduk terus hingga bumbu meresap & rasa menyatu. Kecilkan api.
-   Masukkan potongan nanas & sisa air. Didihkan, masak lagi utk 5 mnt.
-   Beri air nipis, aduk. Angkat. Tunggu sampai mendingin lalu simpan di kulkas min 1 jam.
-   Ltkkan 2 sm es serut di mangkuk saji, beri potongan nanas & tuangi sausnya.

Ingredients
-  1 fresh Pineapple, 100 gr Sugar, Salt    -  225 ml hot Water, 1 cm Ginger-bruised
-  8 cm Cinnamon, 1 tsp Lime juice              -  8 tbsp of crushed Ice, 3 Cloves

Directions
-   Peel the pineapple; rub them with salt. Let it stand for 10 mins. Wash & cut it into small pieces.
-   Heat the sugar in a big pan over medium heat until melted & becomes brownish (make caramel). Use a wooden spoon to stir it.
-   Pour in 150 ml hot water a little at a time. Swirl the water around until it mixes with the caramelized sugar. Add in cloves, ginger, cinnamon & ¼ tsp of salt. Keep on stirring until the flavor blended & then reduce the temperature to low.
-   Put in the cut pineapple & remaining hot water. Bring it to a simmer & cook for another 5 mins.
-   Add in lime juice, stir well. Remove from heat. Let it cooled; refrigerate for min 1 hour.
-   Place 2 tbsp crushed ice in serving bowls, add pineapple pieces above the ice; pour in the sauce.

Bola2 Daging Isi Keju (Cheese Stuffed Meatballs)

Bahan
-  150 gr Daging cincang, 1 Pth telur   -  ½ st Cabai bubuk, Garam secukupnya
-  1 Baw.pth-hlskan, ¼ st Pala bbk       -  2 st Bawang goreng-hlskan, ½ st Lada
-  Keju Mozzarella-ptg dadu ½X½ cm     -  1 sm Peterseli-cincang, Panir

Cara membuat
-   Aduk rata daging dng pth tl, bawang2, pala, lada, cabai bbk, garam, peterseli & 2 st panir.
-   Bentuk bulat pipih, ltkkan septg keju di tengahnya. Rapatkan hingga menutup keju, bentuk bola2 kecil. Gulingkan di panir, kmd goreng hingga kecoklatan. Hidangkan dng mustard/saus cabai.

Ingredients
-  150 gr ground Beef, 1 Egg white          -  ½ tsp Cayenne pepper pwd
-  1 clove Garlic-grind, ¼ tsp Nutmeg      -  2 tsp fried Shallots-grind, ½ tsp Pepper
-  Mozzarella cheese-dice cut ½X½ cm     -  1 tbsp Parsley-chopped, Breadcrumbs, Salt

Directions
-   Combine the beef with egg white, garlic, fried shallots, nutmeg, pepper, cayenne pepper, salt, parsley & 2 tsp bread crumbs.
-   Shape the batter into several round flat forms; place a chunk of cheese in the center & bring the batter around it. Make into small balls. Coat the balls with bread crumbs. Fry until golden brown. Serve with mustard/chili sauce.

Semur Bola2 Daging Isi Telur (Egg Stuffed Meatballs Stew)

Bahan
-  300 ml Kaldu, 3 sm Kecap mns, 1 Tomat-ptg2       Bola2 Daging:
-  2 Cengkeh, 2 Dn salam, ½ B.bombay-cincang         -  300 gr Daging cincang, 3 Telur
-  2 cm Lengkuas & 1 cm Jahe-geprek, ½ st Pala      -  1 Baw.pth-hlskan, ¼ st Pala bbk
-  2 sm Baw.goreng-gerus, ½ st Lada, 2 Cabai-ptg   -  1 Pth telur, 2 st Terigu, Panir
-  2 Baw.pth, 1 st Ketumbar, 2 Kemirihlskan          -  3 st Bawang goreng-hlskan
-  Garam & Minyak secukupnya                                     -  1 st Lada, 1 st Garam

Cara membuat
-   Bola daging: Rebus Telur, kupas. Aduk rata daging dng pth tl, bawang2, pala, lada, garam & terigu. Bentuk bulat pipih, ltkkan 1 telur di tengahnya. Rapatkan hingga menutup telur, bentuk bola2 (jadi 3 bola). Gulingkan di panir, kmd goreng di minyak dng api sedang hingga kecoklatan & matang.
-   Tumis bumbu hls, bombay, cabai, lengkuas & salam hingga layu. Tuangi kaldu, beri kecap mns, jahe, cengkeh, baw. goreng, lada, pala, tomat & sedikit garam. Masak hingga bumbu meresap.
-   Mskkan bola2 daging, aduk2 sebentar hingga kuah mengental. Angkat.

Ingredients
-  300 ml Beef broth, 3 tbsp sweet Soy sauce   -  2 Chilies-sliced, Salt to taste
-  2 Cloves, 2 Bay leaves, ½ Onion-chopped        Meatballs ingredients:
-  2 cm Galangal & 1 cm Ginger-crushed             -  300 gr ground Beef, 3 Eggs-boiled
-  2 sm Fried shallots-grind, ½ tsp Pepper          -  1 clove Garlic-grind, ¼ tsp Nutmeg
-  2 cloves Garlic & 1 tsp Coriander-grind          -  1 Egg white, 2 tsp Flour, 1 tsp Salt
-  2 Candlenuts-grind, ½ tspt Nutmeg                 -  3 tsp Fried shallots-grind
-  1 Tomato-small cut, Frying oil                         -  1 tsp Pepper, Bread crumbs

Directions
-   Meatballs: Combine the meat, egg white, garlic, shallots, nutmeg, pepper, salt & flour. Shape the batter into 3 round flat form; place boiled eggs in the centre & bring the batter around it. Shape them into big balls. Coat the balls with bread crumbs. Fry in medium heat until the meat cooked.
-   Sauté ground spices, onion, chilies, galangal, bay leaves until wilted. Pour in broth; add in soy sauce, ginger, cloves, fried shallots, pepper, nutmeg, tomato & salt to taste. Cook until the flavor blended.
-   Put in meatballs, stir until the sauce reduced. Remove from heat.
