Tongseng (Beef/Lamb Stew with Vegetables)

Bahan
  • ½ kg Daging kambing/sapi-potong2 dadu
  • 3 Daun salam, 6 Daun jeruk, 250 ml Santan
  • 1 cm Lengkuas-geprek, 10 cm Kayu manis
  • 2 Tomat & 6 lembar Kol-iris23 Cengkeh
  • 2 sm Kecap manis2 sm Air jeruk nipis 
  • 3 Cabai keriting-iris, ½ blok Kaldu sapi
  • 1 Sereh-geprek, 2 st Garam500 ml Air
Haluskan:
  • 5 Bawang merah, 5 Bawang putih, 1 st Lada
  • 1 st Pala bubuk, 2 st Jintan, 1 ruas Jahe
  • 1 cm Kunyit, 3 st Ketumbar bubuk, 3 Kemiri

Cara membuat
  • Tumis bumbu halus & cabai. Masukkan daging, aduk sampai daging berubah warna.
  • Tuangi air, tambahkan bahan lain (kecuali kol, tomat, santan & air nipis), masak sampai daging lunak dan kuah tinggal setengahnya. Tuangi santan lalu masak sampai mendidih.
  • Tambahkan kol & tomat, masak sebentar lalu masukkan air jeruk nipis. Aduk rata.

Ingredients
  • ½ kg Lamb/Beef-diced, 2 tbsp Lime juice, 2 tsp Salt
  • 3 Cloves, 1 Lemongrass-bruised, 10 cm Cinnamon
  • 3 Bay leaves, 6 Kaffir lime leaves500 cc Water
  • 1 cm Galangal-crushed, 6 sheets Cabbage-sliced
  • 2 tbsp Sweet Soy sauce, ½ cube Beef broth
  • 3 Cayenne peppers-sliced, 2 Tomatoes-sliced
  • 250 ml Coconut milk
Grind into a paste:
  • 5 Shallots, 5 Garlic cloves3 Candlenuts
  • 2 tsp Cumin, 3 tsp Coriander powder
  • 1 tsp ground Nutmeg1 tsp Pepper
  • 1 cm Turmeric, 2 cm Ginger

Directions
  • Sauté spices paste & chilies in a pan. Add in diced meat; cook until the meat colour changed.
  • In a pot, put in water, sautéed meat & all ingredients (with the exception of cabbage, tomato, coconut milk & lime juice). Cook & let it simmer until the meat tender & only half of the liquid left. Pour in coconut milk; stir often & bring it to a boil.
  • Add in sliced cabbage & tomato; cook it for a moment. Pour in lime juice & stir it well
