Empal sapi Jawa (Javanese Bruised Fried Meat)

Bahan
  • 1 kg Daging paha sapi, 5 Daun salam, 3 st Garam
  • 2 Sereh & 5 cm Lengkuas-geprek, Minyak goreng
  • 2 lt Air, 100 ml Air Kelapa/Santan
Haluskan:
  • 12 Bawang merah, 6 Bawang putih, 2 st Garam
  • 1 cm Jahe, 2½ sm Ketumbar, 2 Asam, 8 Kemiri
  • 3 sm Gula jawa, 1 st Jintan

Cara membuat
  • Rebus daging secara utuh dengan salam, sereh, lengkuas & garam sampai empuk. Angkat daging lalu potong2 berukuran ± 5X4X1½ cm. Pukul2 perlahan hingga melebar.
  • Tumis bumbu halus. Campur bumbu halus dengan 400 ml air & air kelapa/santan. Siram dalam daging. Aduk & simpan semalam dikulkas. Tiriskan daging, goreng di minyak panas hingga kering kecokelatan. Tiriskan di kertas penyerap minyak.

Ingredients
  • 1 kg Top side beef, 5 Bay leaves, 2 Lemongrass
  • 5 cm Galangal-bruised, 2 lt Water, frying Oil
  • 100 ml Coconut juice/Coconut milk, 3 tsp Salt
Grind into a paste:
  • 2½ tbsp Coriander, 12 Shallots, 6 Garlic cloves
  • 1 cm Ginger, 3 tbsp Coconut sugar, 2 tsp Salt
  • 1 tsp Cumin, 2 Tamarind, 8 Candlenuts

Directions
  • Boil the beef, without slicing, together with bay leaves, lemon grass, galangal & salt until tender. Remove the beef & slice it into ~ 5X4X1½ cm chunks. Bruise beef until it is slightly widened.
  • Sauté spices paste. Mix sautéed spices with 400 ml water & coconut milk/juice. Pour this mixture into the beef. Mix well & keep it for minimum 8 hours in the fridge. Drain beef & then deep fry in hot frying oil until nicely brown. Drain on paper towels.
