Bahan
- 1 bungkus Sawi Asin-cuci & iris, 1 liter Air
- 5 Bawang putih-cincang, 2 sm Kecap asin
- 400 gr Iga babi/sapi, 1 st Lada, 1 st Gula
- 1 batang Seledri-potong 4, Garam, Minyak
- 2 cm Jahe-cincang, 1 sm Minyak wijen
Sambal rawit:
- 2 Bawang merah-cincang, 2 sm Kecap asin
- 5 Rawit, 1 Bawang putih kecil, Air
- Rebus iga sampai empuk. Ambil 500 ml kaldunya. Tumis bawang putih & jahe dengan sedikit minyak.
- Masukkan tumisan dalam kaldu, beri seledri, kecap asin, lada, gula. Didihkan & masak ± 10 menit lalu buang seledrinya. Masukkan sayur asin, minyak wijen & garam secukupnya. Aduk rata sampai rasa menyatu. Angkat.
- Sambal rawit: Seduh rawit di air panas, tiriskan & potong2. Campur dengan bawang merah, bawang putih & kecap asin. Tekan2 rawit & bawang dengan sendok agar rasanya merata.
- 1 pack Pickled Bokchoy-washed & sliced, Salt
- 5 Garlic cloves-minced, 1 lt Water, Frying oil
- 1 tsp Pepper, 1 tsp Sugar, 1 tbsp Sesame oil
- 1 Celery rib-cut into 4, 2 tbsp Soy sauce
- 2 cm Ginger-minced, 400 gr Pork ribs/beef
Chili relish:
- 5 Bird`s eye chilies, 1 small Garlic clove-minced
- 2 tbsp Soy sauce, 2 Shallots-chopped, Water
- Boil ribs until tender. Save 500 ml of the broth & set it aside. Sauté garlic & ginger with a little oil.
- Put sautéed spices into the broth; add in celery, soy sauce, pepper, sugar. Bring it to a simmer; cook for 10 minutes & then discard the celery. Stir in Bok choy, sesame oil & salt to taste. Cook until the flavor blended. Remove from the heat.
- Chili: Soak chilies in boiling water, drain & then slice it. Mix chilies with shallots, garlic & soy sauce. Press chilies & shallots with a spoon to blend the flavor.
