In Indonesian & English (the English version is below the recipe written in Indonesian)
Bahan
- 300 gr Brokoli cincang, 60 gr Mentega, 40 gr Terigu
- 6 Kuning telur-kocok, 6 Putih telur, ½ st Lada bubuk
- ¼ st Cabai bubuk, ½ st Pala bubuk, 40 gr Bacon-iris
- 60 gr Keju Parmesan parut, ¼ Bawang bombay-iris
- 1 st Bawang putih cincang, ¼ st Cream of Tartar
- 375 ml Susu+100 ml Krim, ½ st Garam
- 1 Cabai bulat-iris (opsional)
- Lelehkan 2 sm mentega; tumis bawang putih, bombay, bacon, cabai bulat, brokoli hingga harum. Sisihkan.
- Lelehkan sisa mentega di pan, masukkan terigu & masak di api medium 2 menit sambil diaduk. Tuangi susu, aduk hingga lembut. Beri keju, garam, lada, pala & cabai bbk sambil terus diaduk. Angkat dari api.
- Masukkan kuning telur per 1 sendok sambil diaduk. Beri brokoli-bacon. Sisihkan.
- Kocok cream of Tartar & putih telur sampai kaku. Mskkan 1/3 bagian putih telur ke dalam adonan brokoli, aduk dng gerakan spt melipat2 perlahan (jangan dikocok/diputar). Teruskan memasukkan putih telur per 1/3 bagian, aduk melipat perlahan2.
- Panaskan oven 180°C. Tuang adonan ke dalam 8 cup soufflé yang sudah diminyaki, panggang 25-30 mnt.
- 300 gr chopped fresh Broccoli, 6 Egg yolks-beaten
- 60 gr grated Parmesan cheese, 1 tsp minced Garlic
- 40 gr minced Bacon, ¼ Onion-chopped, 60 gr Butter
- ½ tsp ground Pepper, ¼ tsp Cayenne pepper powder
- ¼ tsp Cream of Tartar, 375 ml Milk+100 ml Cream
- ½ tsp ground Nutmeg, 40 gr Flour, 6 Eggs whites
- ½ tsp Salt, 1 Bell pepper-sliced (optional)
- Melt 2 tbsp butter; sauté onion, garlic, bacon, bell pepper, broccoli until fragrant; set it aside.
- Melt the rest of butter in saucepan, stir in flour & cook over medium heat for 2 minutes. Pour in milk, stir until smooth. Add in cheese, salt, pepper, cayenne pepper & nutmeg; stir constantly. Remove from the heat.
- Add in egg yolks a spoon at a time; stir constantly. Put in broccoli-bacon. Set it aside.
- Beat cream of Tartar with egg whites until stiff. Add 1/3 of the egg whites mixture into the broccoli, folding gently. Continue to add the whites by thirds, folding very gently.
- Preheat oven to 180° C. Pour batter into 8 greased soufflé cup, bake for 25-30 min.
