Ayam Bakar Padang (Minangese Grilled Chicken)

Haluskan:                                                                   Bahan lain:
8 Baw.mrh, ½ st Adas mns, 6 Cabai mrh      -  1 Ayam-ptg 8, 10 cm Kayu manis
½ sm Ketumbar, 1 st Jintan, 3 cm Kunyit    -  5 Daun jrk, 500 ml Santan
4 Baw.pth, 2 Asam, 5 Kemiri, 3 cm Jahe    -  6 cm Lengkuas-parut, 3 sm Minyak
½ st Lada, 1 st Gula, 2 st Garam                   -  2 Sereh-geprek, 3 Cengkeh

Cara membuat
-   Tumis bumbu hls, ky mns, cengkeh, daun jrk & sereh hingga harum. Mskkan ayam, aduk & masak hingga ayam ½ matang. Kecilkan api. Tuang santan, masak sambil ayam sesekali ditusuk2 garpu & diaduk hingga kuah mengering & berminyak.
-   Angkat, dinginkan. Lumuri ayam dng bumbu kering merata kmd bakar hingga kekuningan.

Ingredients

6 Red chilies *, 4 cloves Garlic                  -  1 Chicken-cut into 8, 3 Cloves
8 Shallots, ½ tsp Anise, 3 cm Ginger       -  5 Kaffir lime leaves, 3 tbsp frying Oil
½ tbsp Coriander, 3 cm Turmeric              -  500 ml Coconut milk, 10 cm Cinnamon
½ tsp Pepper, 1 tsp Sugar, 2 Tamarind   -  6 cm Galangal-grated
1 tsp Cumin, 5 Candlenuts, 2 tsp Salt     -  2 Lemongrass-bruised

Directions
-   Sauté spices paste, cinnamon, cloves, lime leaves & lemon grass until fragrant. Stir in chicken chunks until half cooked. Reduce the heat to low. Pour in coconut milk & salt. Pierce the chicken with a fork & stir occasionally until the sauce thickens & greasy.
-   Remove from the heat & let cool. Smear the chicken with the sauce evenly & then grill until nicely golden brown.
* You can use seeded chilies/substitute it with 1 Paprika if you don`t want it to be spicy
