Gulai Nangka/Cubadak (Minangese Young Jackfruit Curry)


In Indonesian & English

Bahan
-  300 gr Nangka muda-ptg2, 2 st Gula    -  5 sm Kelapa prt-sangrai & hlskan, 1 st Asam
-  350 gr Daging tetelan-ptg, 5 Dn jrk     -  100 gr Kac.panjang-ptg2 (opsional)
-  2 Kapulaga, 1 Pekak, 250 ml Santan      Haluskan:
-  3 cm Lengkuas & 2 Sereh-geprek            -  8 Baw.mrh, 4 Baw.pth, 2 st Ketumbar
-  3 D.salam, 4 sm Minyak, 1 Dn kunyit    -  4 Kemiri, 2 cm Jahe, 1 cm Kunyit
-  1 st Lada, 800 ml Kaldu, Garam              -  4 Cabai merah, 2 Cabai keriting


Cara membuat
-   Tumis bumbu hls. Rebus daging dng kaldu & semua bumbu 20 mnt. Beri santan, masak sampai empuk sambil diaduk agar santan tdk pecah.
-   Mskkan nangka, masak sampai lunak. Beri kelapa & kacang panjang, masak hingga kuah agak mengental. Angkat.

Ingredients
-  300 gr unripe Jackfruit-cut, Salt              -  1 tsp Pepper,100 gr String beans (optional)
-  350 gr Flanks meat-cut, 4 tbsp Fry.oil   -  5 Kaffir lime leaves, 1 Turmeric leaves
-  2 Cardamom, 1 Star anise, 2 tsp Sugar   Grind into a paste:
-  3 cm Galangal & 2 Lemongrass-bruised      -  1 cm Turmeric, 2 Cayenne pepper
-  250 ml thick Coconut milk, 3 Bay leaves   -  4 Red chilies, 2 cm Ginger, 4 cloves Garlic
-  5 tbsp grated Coconut-roasted & grind    -  2 tsp Coriander, 4 Candlenuts, 8 Shallots
-  800 ml Beef broth, 1 tsp Tamarind


Directions
-   Sauté the spices paste. Boil the meat with broth, sautéed spices & other spices for 20 mnt. Pour in the coconut milk; stir continuously & cook until the meat is tender.
-   Add in the jackfruit, cook until the jackfruit tender. Put in grated coconut & string beans; cook until the liquid becomes rather thick. Remove from the heat.
