Cake Ketan Hitam Kukus (Steam Black Beauty Cake)

Bahan
  • 300 gr Tepung ketan hitam, 7 Telur-suhu ruang
  • ¾ st Baking powder, ½ st Garam, 1 st Emulsifier
  • 150 gr Santan kental, 280-300 gr Gula halus
  • 1 st Vanili, 200 ml Minyak sayur
Penyajian: opsional
  • Cream cheese/Whipped cream/Susu kental manis
  • Keju serut

Cara membuat
  • Minyaki loyang ukuran 20X23 (24X24X6) cm lalu taburi terigu, sisihkan. Campur rata tepung, bak.pwd & vanili, sisihkan. Campur minyak & santan, sisihkan. Isi kukusan sampai ½ tingginya dng air. Bungkus tutup kukusan dng lap, didihkan hingga kukusan beruap.
  • Sementara itu, mixer telur, gula, garam & emulsifier dng kecepatan rendah hingga rata. Naikkan kecepatan ke tinggi, kocok hingga adonan mengembang, putih & kental berjejak
  • Tuangi campuran minyak santan, aduk hingga tercampur saja. Masukkan tepung ketan sedikit2 sambil diaduk dng spatula dng gerakan melipat balik.
  • Tuang adonan ke loyang lalu kukus selama 45-50 mnt. Keluarkan loyang dari kukusan, diamkan cake di dlm loyang selama 5 mnt. Keluarkan dari loyang & biarkan mendingin seblm dipotong.
  • Potong2 cake, olesi dng cream cheese/whipped cream/SKM & taburi keju seblm disajikan.

Ingredients
  • 7 Eggs-room temperature, 280-300 gr Sugar
  • 300 gr Black sticky rice flour, 1 tsp Vanilla
  • 150 gr Coconut cream, 200 ml Vegetable oil
  • 1 tsp Emulsifier, ¾ tsp Baking powder, ½ tsp Salt
Serving: optional
  • Cream cheese/Whipped cream/Condensed milk
  • grated Cheese

Directions
  • Grease a 20X23 (24X24X6) cm baking pan & then sprinkle with some flour; set aside. Combine flour, bak.pwd & vanilla; set aside. Mix coconut cream & vegetable oil; set aside. Fill a steamer until ½ of its height with water. Cover the lid with a cloth; then heat steamer until the water is boiling & steam comes out from under the lid.
  • Meanwhile, beat the eggs, sugar, salt & emulsifier with an electric mixer over low speed until it combine. Turn the speed to high; beat until the batter rise, white & thick.
  • Pour in coconut mixture; stir jut to combine. Gradually add in the flour while you keep on folding it with a spatula.
  • Pour batter into the pan & steam it for 45-50 minutes. Remove pan from the steamer; let cake rest in the pan for 5 minutes. Remove cake from the pan, let it cool down completely
  • Slice the cake; spread enough cream cheese/whipped cream/condensed milk & sprinkle some grated cheese on top before serving.
