Soto Mie (Noodle-Beef Soup with Springroll)

Bahan
  • 250 gr Mie telur, 6 Daun jeruk3 Daun salam, 1 lt Air
  • 400 gr Tetelan/Kikil, 1 sm Kecap manis1 st Lada bubuk
  • 3 lembar Kol+2 Tomat+1 Seledri-iris21 st Kaldu bubuk
  • 3 Kentang-iris & goreng, 2 Daun bawang-iris
  • 2 Sereh-geprek
Haluskan:
  • 4 Bawang putih1 cm Jahe, 1 st Gula, 8 Bawang merah
  • 2 Kemiri, 1 cm Kunyit, 2 st Garam
Sambal:
  • 2 Bawang putih150 gr Rawit½ Jeruk limau-peras
  • 2 sm Kaldu, ½ st Garam
Lumpia Bihun:
  • 10-12 Kulit lumpia, 2 Bawang putih-haluskan, 1 st Garam
  • 150 gr Bihun-seduh air panas1 st Lada bubuk

Cara membuat
  • Tumis bumbu halus. Rebus daging dengan bumbu halus, daun jeruk, salam, sereh, gula sampai tetelan/kikil empuk. Beri kecap, masukkan kol, masak sebentar.
  • Lumpia: Tumis bawang putih, lada & garam. Angkat & campurkan dengan bihun. Letakkan sedikit bihun di kulit lumpia, gulung. Goreng lumpia hingga kuning kecokelatan. Angkat & tiriskan di kertas penyerap minyak. Potong2 lumpia sebelum disajikan.
  • Sambal: Haluskan rawit, garam & bawang putih lalu tumis. Angkat, beri kaldu & limau.
  • Penyajian: Atur mie, tomat, kentang, risol, seledri, daun bawang. Beri daging & kuah. Makan dengan sambal rawit.

Ingredients
  • 250 gr Egg Noodle, 1 tsp Beef broth powder, 1 lt Water
  • 400 gr Flanks meat/Beef tendon*, 2 Lemongrass-bruised
  • 2 Green onions-sliced, 1 tsp ground Pepper3 Bay leaves
  • 2 Tomatoes & 1 Celery-sliced, 1 tbsp Sweet soy sauce
  • 3 Potatoes-sliced & then fry, 6 Kaffir lime leaves
  • 3 sheets Cabbage-sliced
Grind into a paste:
  • 2 Candlenuts, 8 Shallots, 4 Garlic cloves1 cm Ginger
  • 2 tsp Salt, 1 cm Turmeric, 1 tsp Sugar
Chili paste:
  • 150 gr Bird`s eye chilies, 2 Garlic cloves, 2 tbsp Broth
  • ½ Kaffir lime, ½ tsp Salt
Noodle spring roll:
  • 10-12 Spring roll wrappers150 gr Rice noodle, Salt
  • 2 Garlic cloves-grind, 1 tsp Peppercorns

Directions
  • Sauté the spices paste. Boil meat/tendon with sautéed spices, lemongrass, kaffir lime & bay leaves until the meat tender. Add in soy sauce & cabbage; cook for a while.
  • Spring roll: Soak rice noodle in hot water until it softens; drain. Sauté ground garlic, pepper & salt. Remove from heat; mix it with the noodle. Set aside. Put some rice noodle in the spring roll wrapper. Fold & roll it to cover the noodle. Fry spring roll until golden brown. Remove from the heat & drain in paper towel. Slice spring roll before serving.
  • Chili paste: Grind chilies, salt & garlic. Sauté the chili paste. Remove from the heat; add in 2 tbsp of broth & kaffir lime juice.
  • Serving: Put the noodle, tomato slices, fried potatoes, sliced spring roll, celery & green onions in a bowl. Pour in some meat/tendon soup. Serve it with the chili paste.
  • * Beef tendon (leg sinew-foot tendon, skin, cartilage).

Sayur Lodeh (Javanese Vegetables Stew)

Bahan
  • 200 gr Daging-potong, 100 gr Tempe-potong dadu
  • 3 Cabai, 1 Wortel, 25 gr Rebung, 5 Kacang panjang
  • ½ Terong ungu, ½ Labu siam, 4 Daun kol, 750 ml Air
  • 2 Daun salam, 2 cm Lengkuas, 250 ml Santan
Haluskan:
  • 2 st Ketumbar, 5 Bawang merah, 2 Bawang putih
  • 2 st Gula jawa, 1 cm Kencur2 cm Kunyit
  • 2 st Garam, 1 st Lada

Cara membuat
  • Potong sayuran proporsional. Tumis bumbu halus, sisihkan. Rebus daging, labu, daun salam & lengkuas dengan air secukupnya sampai daging empuk & air berkurang.
  • Masukkan tumisan, sayuran lain, cabai & tempe ke dalam rebusan daging. Masak sampai sayuran agak layu. Tuang santan, masak & aduk hingga semua matang. Lebih enak bila dimakan keesokan harinya.

Ingredients
  • 200 gr Beef-sliced, 5 Long beans, 25 gr Bamboo shoots
  • 1 Carrot, 3 Chilies, 100 gr Tempeh-diced, ½ Chayote
  • 250 ml Coconut milk, 4 sheets Cabbage, 2 Bay leaves
  • ½ Eggplant, 2 cm Galangal, 750 ml Water
Grind into a paste:
  • 2 Garlic cloves5 Shallots, 1 cm Lesser Galangal
  • 2 tsp Coriander, 2 tsp Brown/Coconut sugar
  • 2 cm Turmeric, 1 tsp Pepper, 2 tsp Salt

Directions
  • Slice all vegetables. Sauté spices paste; set it aside. Boil the meat, chayote, bamboo shoots, bay leaves & galangal in enough water until the meat tender & water reduced.
  • Put in sautéed spices, other vegetables, chilies & tempeh. Pour in coconut milk; simmer until all are cooked. The dish will taste better when you cooked it a night in advance before serving.

Tumis Kangkung Tauco (Sautéed Water Spinach with Fermented Soy Beans)

Bahan
  • 1 ikat Kangkung-petik, 150 gr Tempe-potong2 & goreng
  • 2 Cabai merah & ½ Bawang bombay-iris, 2 sm Tauco asin
  • 6 Tomat cherry/1 Tomat-potong2, 100 ml Air, Garam
Haluskan:
  • 2 Cabai keriting, 1 Bawang putih, 1 Bawang mereh
  • 1 st Lada, ½ cm Jahe

Cara membuat
  • Tumis bumbu hls, cabai & bombay iris. Masukkan tauco, masak hingga harum.
  • Beri air, tomat & kangkung, masak hingga kangkung layu. Mskkan tempe goreng, aduk & cicipi. Beri garam bila perlu, aduk rata.

Ingredients
  • 1 bundle Water Spinach-sliced, 100 ml Water
  • 2 Red chilies & ½ Onion-thinly sliced, frying Oil
  • 150 gr Tempeh-diced & deep fried, Salt
  • 2 tbsp Fermented Soy Beans
  • 6 Cherry tomatoes/1 Tomato-sliced
Grind into a paste:
  • Cayenne peppers, 1 Garlic clove, 1 Shallot
  • ½ cm Ginger, 1 tsp Pepper

Directions
  • Sauté the spices paste, sliced chilies & onion. Add in fermented soy beans & cook until fragrant.
  • Put in water, tomatoes & water spinach. Cook for awhile & then stir in tempeh. Taste it; add salt if it's necessary (some fermented soy beans are salty enough). Remove from the heat.

Rendang Ayam (Indonesian Dried Chicken Curry)

Bahan
  • 4 Paha ayam, 700 ml Santan, 1 cm Lengkuas & 2 Sereh-geprek
  • ½ st Kapulaga bubuk, 1 sm Ketumbar, 8 cm Kayu manis, 1 Asam
  • 2 sm Kelapa parut-sangrai, 2 Daun salam, 3 Daun jeruk, Minyak
  • 1 st Adas, 2 st Garam, 1 st Gula, 1 st Pala, 1 st Klabet
Haluskan:
  • 3 Bawang putih3 Cabai merah, 6 Bawang merahcm Kunyit
  • 1 cm Jahe5 Kemiri

Cara membuat

Ingredients
  • 4 Chicken thighs, 700 ml Coconut milk½ tsp Cardamom powder
  • 1 cm Galangal & 2 Lemongrass-bruised, 1 tsp Fenugreek leaves
  • 1 Tamarind, 2 Bay leaves, 1 tsp Fennel, 3 Kaffir lime leaves
  • 8 cm Cinnamon1 tbsp Coriander, 1 tsp Sugar, 1 tsp Nutmeg
  • 2 tbsp grated Coconut-roasted, 2 tsp Salt, frying Oil
Grind into a paste:
  • 3 Red Chilies, 3 Garlic cloves, 1 cm Ginger, 1 cm Turmeric
  • Candlenuts, 6 Shallots

Daging Masak Lokio (Spicy Beef with Chives Stew)

Bahan
  • 500 gr Daging sapi-iris tipis15 Rawit-potong 22 st Lada
  • 12 Lokio+2 Cabai keriting+2 Daun bawang-iris1 Daun salam
  • 1 sm Saus tiram, 1 sm Minyak wijen1 st GaramMinyak
  • 5 Bawang merah & 3 Bawang putih-haluskan½ st Gula
  • 2 cm Jahe-cincang, 1 Sereh-geprek, 4 sm Kecap manis
  • 250 ml Air+1 st Kaldu bubuk, 3 sm Kecap asin

Cara membuat
  • Tumis bumbu halus, salam, sereh & jahe. Masukkan daging, masak hingga berubah warna.
  • Beri cabai2, kecap2, minyak wijen, saus tiram, garam, lada & gula. Aduk rata.
  • Tuangi air sedikit2, masak hingga matang & air berkurang. Beri daun bawang & lokio, aduk2.

Ingredients
  • 500 gr Beef-thinly sliced, 2 tsp Pepper, ½ tsp Sugar
  • Cayenne peppers+2 Green onions & 12 Chives-sliced
  • 15 Bird's eye chilies-halved, 4 tbsp Sweet soy sauce
  • 1 tbsp Oyster sauce, 1 tbsp Sesame oil1 tsp Salt
  • 5 Shallots & 3 garlic cloves-grind3 tbsp Soy sauce
  • 2 cm Ginger-minced, 1 Lemongrass-bruised, frying Oil
  • 250 ml Water+1 tsp Beef broth powder, 1 Bay leaf

Directions
  • Sauté ground spices, bay leaf, lemon grass & ginger. Put in the beef; cook until the beef colour change.
  • Put in chilies, soy sauces, sesame oil, oyster sauce, salt, pepper & sugar.
  • Stir in water-broth powder mixture a little at a time; simmer until the meat cooked & the sauce reduce. Add in green onions & chives, cook for awhile.
